Ingredients matter. If you are going to take time out of your busy schedule to make something homemade, it only makes sense to use the most wholesome and chemical free products you can find.
I'm very picky about the ingredient I use. Here are a few I suggest to make the best muffins ever!
Flour
I grind my own, but I realize this isn't an option for many people. King Arthur makes several great flours. It's much easier to find in local grocery stores than it was several years ago. http://www.kingarthurflour.com/
Baking Soda
Always buy aluminum free. I like Bobs Redmill.

Baking Powder
Also, always buy aluminum free. I like either Bobs or Rumford. Rumford is easy to find in most grocery stores.

Salt

Coconut Oil
I love the taste of coconut oil and it's a healthy alternative to butter. It adds a butter flavor to sauteed vegetables and popcorn. I've tried several brands of coconut oil and always come back to Nutiva. Costco just started carrying it so it's even more affordable.

Maple Syrup
Always use real maple syrup. I know it's expensive, but you are worth it! I buy mine at Costco.
Applesauce
Always buy organic. Apples are at the top of the "Dirty Dozoen" list by EWG. Organic matters when buying apples.

Muffin Pans
I ditched my aluminum muffin pans a while ago and moved to stoneware. Stoneware is awesome and super safe! I love this muffin pan made in Ohio by Hartsone Pottery. It's naturally stick-resistant and I'm not worried about what might be leaching into my muffins. I have 2. Yes, I know it is expensive, but peace of mind is priceless!!
